Ingredient

  • 12 large mushrooms
  • 1/2 cup chopped onion
  • 1/2 cup chopped bell pepper
  • 1/2 cup chopped celery
  • 1 tablespoon minced garlic
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons olive oil

Instructions

  1. Preheat oven to 350°F.
  2. Clean mushrooms and remove stems. Finely chop mushroom stems and set aside.
  3. In a skillet, heat olive oil over medium heat. Add onion, bell pepper, celery, garlic, thyme, basil, salt, and pepper. Sauté for 5 minutes.
  4. Add chopped mushroom stems to the skillet and continue to sauté for another 5 minutes.
  5. Remove skillet from heat and stir in breadcrumbs and Parmesan cheese.
  6. Stuff each mushroom cap with the vegetable mixture and place on a baking sheet.
  7. Bake for 25-30 minutes or until mushrooms are tender and stuffing is golden brown.
  8. Serve warm.
