Vegetarian Stuffed Mushroom Recipe

Ingredient
- 12 large mushrooms
- 1/2 cup chopped onion
- 1/2 cup chopped bell pepper
- 1/2 cup chopped celery
- 1 tablespoon minced garlic
- 1/2 teaspoon dried thyme
- 1/2 teaspoon dried basil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 2 tablespoons olive oil
Instructions
- Preheat oven to 350°F.
- Clean mushrooms and remove stems. Finely chop mushroom stems and set aside.
- In a skillet, heat olive oil over medium heat. Add onion, bell pepper, celery, garlic, thyme, basil, salt, and pepper. Sauté for 5 minutes.
- Add chopped mushroom stems to the skillet and continue to sauté for another 5 minutes.
- Remove skillet from heat and stir in breadcrumbs and Parmesan cheese.
- Stuff each mushroom cap with the vegetable mixture and place on a baking sheet.
- Bake for 25-30 minutes or until mushrooms are tender and stuffing is golden brown.
- Serve warm.
