  • 1/4 cup chopped cucumber
  • 1/4 cup chopped bell pepper
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 clove garlic, minced
  • Salt and pepper to taste


  1. Rinse quinoa under cold running water.
  2. In a medium saucepan, bring the quinoa and water to a boil.
  3. Reduce heat to low, cover, and simmer for 15-20 minutes or until the quinoa is tender and the water is absorbed.
